Bayonne for Art & History

Bayonne owes its significant architectural heritage to its rich history. The port at the confluence of the Nive and Adour rivers and its close proximity to Spain continue to shape its future. The town's long history of defiance is reflected in its motto: Nunquam Polluta (never defiled). Its military and commercial development has been well established over the centuries and is visible on the buildings and beautiful town houses it is reputed for. Bayonne also gave its name to the bayonet, a local 17th century invention.
Bayonne has strong policies on heritage and culture and obtained France's official « Town of Art & History » status  in 2012, in recognition of 2,000 years of history and rich heritage.
Bayonne takes you on a journey through the ages from the Gothic cathedral – a World Heritage Site since 1998 as part of the French Pilgrim Routes of Santiago de Compostela, to the old town restoration project, the ramparts, the cloister and the Château-Vieux.
Founded in 1922, the Basque Museum immerses you in the mystery of the Basque people and is unique in France. 

 

Bayonne for Gourmets

Bayonne is a true capital of French gastronomy and Basque cuisine.
Bayonne has a long history with chocolate and is today home to many of France's top chocolatiers (specialist chocolate makers) in who's shops you can enjoy shopping or just relaxing with a deliciously frothy hot chocolate from Bayonne's oldest chocolate maker Cazenave.
Famed for its ham, the excellent Jambon de Bayonne, you can find the award winning Ibaiona ham or take a tour of Pierre Ibaialde's Atelier and visit the salting-tub and drying room. The tour ends with a tasting.
Pleasure is a way of life in Bayonne and its many restaurants offer the best in French and local cuisine: Axoa de veau (minced veal), merlu koskera (hake), piperade (scrambled eggs with peppers), omelette à la morue (salt cod omelette), chuleta (meat cutlet)...You can also experience the Spanish influence, from delicious tapas in the local Bodegas, to dinner in one of the Basque cidreries (cider houses) where you serve your own glass of cider straight from the vat.

Bayonne for festivals

Bayonne is known all over the world for its summer festivities but it vibrates throughout the year according to its major events. Whether they are cultural, traditional, sports or gastronomic, they are always a pretext for the festival. Each event is the occasion for a spontaneous celebration in the bars and restaurants of the city. For one of the peculiarities of Bayonne is its festive spirit.
